Freezer Maintenece

I have been getting a share of beef from Carmen Ranch. Sometimes my inspiration for cooking needs to come from what we have left in the freezer. We have several round steaks which I was not quite sure what to do with so I looked specifically for recipes that can be done with these and found a yummy beef pie recipe.

 

Home Made Bone Broth

Bone Broth/Stock

  • 5 to 6 pounds beef bones and trimmings

  • 3/4 pound of beef stew chunks

  • 2 medium onions, peeled, quartered

  • 2 large carrots, peeled and cut into 2-inch pieces

  • 2 stalks celery, with leaves, cut into 2-inch pieces

  • 2 tablespoons olive oil

  • 1 tablespoon tomato paste

  • 3 1/2 quarts water, divided

  • 1 large bay leaf, or 2 small bay leaves

  • 3 to 4 sprigs fresh parsley

  • 1/4 teaspoon dried thyme, or 1 to 2 sprigs fresh thyme

  • 1 Tablespoon tomato paste

  • 1/2 teaspoon black peppercorns

  • 1 teaspoon apple cider vinegar

    Let sit in slow cooker for 12 hours on low after you roast the bones for 45 minutes with tomato paste (to help break down collagen) and cook the beef stew chunks with salt and pepper for 10 minutes and let all sides brown.
